Mandalay Baya Kyaw (Mandalay-style Black Gram Fritters) - these savoury doughnuts are basically our take on Medu Vada 😋
#BurmeseFood #IndianFood #MandalayBFAB
We *really* like to fry stuff 🍳
Recipes for most of these crispy beauties will be in my book MANDALAY: Burmese Food & Beyond 😋

Beautiful Burmese fritters via @BeirutiBrit!
Clockwise from top: sweetcorn fritters, peanut & sticky rice doughnuts, Mandalay bean fritters, Mandalay gram fritters, mashed potato fritters, chickpea fritters, gourd fritters. Middle: split pea crackers.

Reason No. 1,476 as to why I am so grateful that @missminifer was the stylist on #MandalayBFAB - cos when I try to arrange my Burmese Fried Chicken (Kyet-Thar Kyaw), it ends up looking like the Thing 🐔🐙
Falooda!
An Indian rose milk dessert that’s been wholeheartedly embraced by the Burmese - we call it Hpaluda with a soft P because we don’t have Fs 😝
It’s gotta be pink! 🍧

And ... that’s a wrap! 🎬
Every single dish in MANDALAY: Burmese Food & Beyond will have a glorious full-colour photo thanks to this team of superstars!
Can’t wait till I can share them with you all! 😍

Last day of the #MandalayBFAB photoshoot.
I shall miss these “family” lunches - it’s been a brilliant 6 days working with these superstars!
#BurmeseFood
Special guests for lunch on Day 5 of #MandalayBFAB photoshoot - the wonderful @julietpickering (001) and the lovely @hatteatime (002) (this is a bad joke based on the fact that they are my agents).
Also, I made @missminifer and Marie eat lemons AND THEY LIKED IT 😁#BurmeseFood
Day 4 in the #MandalayBFAB house, and today @missminifer @Cris_Barnett and I celebrated the birthday of Marie, art director at @absolute_press with a mojito drizzle cake.
The inimitable @matt_inwood also popped in, bearing some more beautiful props for my book.
#BurmeseFood
Made another batch of crispy fried garlic today. So satisfying.
#MandalayBFAB #BurmeseFood
Seriously though, I think one of the best parts of each day has been sitting down and eating with my brilliant team ❤️
It’s been a dream working with @missminifer @Cris_Barnett and Marie O’Shepherd from @absolute_press on MANDALAY.
#MandalayBFAB #BurmeseFood
First day of the shoot in the bag for my forthcoming book MANDALAY: Burmese Food & Beyond!
So much fun when you have an amazing team like @missminifer @cris_barnett @absolute_press ❤️

Been raiding my mum and dad’s house for props for my book MANDALAY - the main photoshoot starts on Wednesday! 😱
The small (begging) bowls in the front right were carved by my grandfather in the Fifties.

So surreal but nice to see my Chickpea Tofu Fritters out there in the world - @axelriolondon on Instagram made them and called them a “revelation” 🤩💕
#BurmeseFood #MandalayBFAB
I’m biased, but I think Burmese script is utterly beautiful, so I’m pleased to say that my book MANDALAY will have the names of all the dishes written in Burmese as well as in English.
Here’s a sneak peek of the section on Desserts ... #MandalayBFAB #BurmeseFood
Paddy-Planter’s Relish (Kauk-Sike Ngapi Chet) - funky, salty, spicy, savoury, a very Mandalayan dish ❤️
#MandalayBFAB #BurmeseFood
Such a pleasure cooking with @foodandpsych today!
We made Pazun See-pyan (Red Prawn Curry), Tohu Kyaw (Burmese Tofu Fritters), Chinyay-Hin (Sour Soup) & Gawbi-Chin (Burmese Coleslaw) and I divulged all my deepest, darkest secrets for her podcast 😆
#BurmeseFood #MandalayBFAB
I made Shwe Yin Aye (Golden Heart Cooler) 🍨
This Burmese hotchpotch of loveliness is often sold at markets and temples as a sweet snack to cool you down, in the same way as an ice cream.
#MandalayBFAB #BurmeseFood
Finally happy with these which are crispy yet brittle like my favourite Mohinga cycle vendor in Mandalay
(check out his pink plastic bag full of pea crackers - my dad took this photo)
#MandalayBFAB #BurmeseFood.
Been testing various batters and pulses for Pe Kyaw - the pea cracker which accompanies Mohinga (fish noodle soup) and Ohn-no Khao Swè (coconut noodles).
#MandalayBFAB #BurmeseFood
Pickled Ginger and Sesame Salad (Jin Thohk) - before & after mixing.
Used @Hodmedods roasted peas instead of the usual roasted chana dal.
Only thing missing is fried peanuts which I had in my hand and then put down somewhere and now cannot find 🤪
#BurmeseFood #MandalayBFAB
This time though, I was making the crispy onions and garlic for ngapi jaw aka balachaung (jaw).
This shrimp-based sambal/relish is funky, potent and amazing.
Eat with rice or even in a sandwich.
#BurmeseFood #MandalayBFAB #balachaung
Crispy fried onions and crispy fried garlic are used to garnish numerous Burmese dishes including salads and noodles.
In Burma, you can buy them in big bags, but in the UK, I make my own, as the stuff in shops is usually coated in flour.

When I was a kid, it became fashionable in Burma to fill Mont Lin Mayar with quail eggs instead.
These are usually sold and eaten as separate halves rather than combined, contrary to the “husband and wife” name, but I have to say I prefer them! 🍳
#BurmeseFood #MandalayBFAB
Making Mont Lin Mayar (“husband and wife snacks”) for the 1st time.
They’re little crispy pancakes filled with peas & spring onions - similar to Thai Khanom Khrok and Vietnamese Banh Khot.
I used too much batter so the edges cracked, but tasty 👍
#BurmeseFood #MandalayBFAB
Bazuhn Seebyun / Pazun See Byan (Red Prawn Curry)
This curry + lots of fluffy rice = ❤️
#MandalayBFAB #BurmeseFood
Shaok-thee Thohk (Burmese Citrus Salad).
Spicy, sour, savoury and super-addictive 🍋🍋🍋
