Cooked Peanut Aubergine Masala from @chetnamakan’s new book. Mine used long Japanese eggplant and turned out less red, more “rustic charm,” but the nutty peanut stuffing and coconut-onion sauce were ridiculously good. Baby aubergine test coming soon.
