If the sour dip drips, you’ve wet the chip.
Fair, but I would argue absorption rate and viscosity matters here. A dip and eat is great, but not great if it sits long enough to absorb.
Some drys shouldn’t be wetted.

Continuing loaf pan experiments. Just plain sourdough, no enrichment.
Oh also one other thought: if it is so delicate you can’t get stretch and folds done without it separating, go ahead and switch to coil folds. One or two sets will give you lots of strength!
It’s nearly impossible for focaccia dough to be too wet. But if it is being very troublesome in addition to your stretch and folds, before putting it in the pan, do a final set of coil folds. They work really well for very soft doughs.

Looks delicious! I made a giant bean salad yesterday! I’ve been influenced into it by stories of Millennial colorectal cancer rates. I was definitely short on fiber! But this was so good I can see it becoming a regular thing.
