Acetyl-CoA carboxylase (ACC) and fatty acid synthase (FAS) complexes are critical enzymes in fatty acid (FA) biosynthesis. In plants, FAS is a multiprotein complex comprising various enzymes responsible for acyl transfer, carbon chain elongation, and reaction termination. The initial condensation reaction is facilitated by β-ketoacyl-ACP synthase III (KASIII), while the six subsequent condensation steps are carried out by KASI, resulting in the production of C16:0. This product is elongated to C18:0 by the action of KASII. The C18:0 is then desaturated to C18:1, a process mediated by the stearoyl-acyl carrier protein (ACP) desaturase encoded by SSI2.
