A federal judge has denied West Virginia's ban on artificial dyes in foods, pausing a law set to restrict the use of 7 fake colors stating in 2028. WV was the first state to ban the dyes; Big Food is pushing back hard.

During a visit to our lab, a parent noticed on a survey that we asked about their consumption of potatoes, and then a separate question about fries.
"Is there that much of a difference between a fry and other potatoes?"

NOURISH includes structural MRI scans to track how diet may affect brain structure—monitoring total brain & hippocampal volume, & white matter changes over time, in addition to brain infarcts. Nutrition science can inform how these neuroimaging markers change over time.

A pilot study recently published by Kathleen Keller, SSRI cofund & Helen A. Guthrie Chair of nutritional sciences at Penn State by In Frontiers in Nutrition demonstrated that the AI system is currently about 70% as successful as human bite counters. ➡️
