Recipe modifications included: 1) I used a homemade gluten free pie crust instead of puff pastry - worked beautifully; 2) instead of baking this in the pan used to fry the shallots and onions, I used a round Corningware baking dish which is what I always use for recipes like this - much easier to flip to perfection in my experience.

Tonight I marinated a chicken breast with jalapeño vinaigrette, garlic, onions, and a touch of orange juice. Grilled it on medium high for about 7-8min inolive oil I made a nice sauce with the drippings! It was fabulous! I had brown rice and mixed veggies. With it! 😎 #BlueSkyCooks #BlueSkyFood
