スパゲッティ（太め1.9mm）、ベーコン（本来ならパンツェッタ）、卵黄、粉パルメザンチーズ（パルメジャーノレッジャーノまたはペコリーノロマーノ）、牛乳（生クリームまたは使わず）、黒胡椒。本場とは違う代用の材料で作るカルボナーラ。クリーミーに仕上げるには卵が固まらないよう熱を加え過ぎないこと。予熱と弱火で手際よくパスタとソースを和える。
カルボナーラのような濃厚なソースには太めの麺の方が合う。卵とチーズとベーコンと脂の濃厚な味。これがワインによく合う。
