Chicken Fried Rice!
First fried rice in... a while.
Using mostly fresh ingredients; though my rice seems to be a bit mushy (It's not - just looks it).
I needed a #ChefBadger for the new month.
And yes - I'ma try to get something pie related for 3.14. :D

Fantasy Roll w/ a side of unagi
I was able to go out and be a person today. With actual, other people.
I know. I'm scared too.
But we had some gyoza (that I tore halfway through before a picture) and some unagi and a special roll with spicy shrimp, avocado tempura crunch & snow crab, tobiko & eel sauce.

Pot Roast!
Tonight on #ChefBadger - slow cooker pot roast!
But we have gold and purple carrots for a change, some baby carrots, and yukon golds with a from scratch sauce.
I did have a sachet of onion but I don't like whole onion IN my roast so... it'll be processed down later afterwards. XD
2026 Curry!
Starting #ChefBadger in 2026 with an oldie but goodie. I'm trying to refine the recipes I've already got down to make them better.
Green pepper being sauteed with onion and garlic to give it more kick, and fresh scallion for texture!
And of course, trying to make plating pretty.

Roasted delicata squash
Today on #ChefBadger we did some roasted delicata squash.
It really does taste like roasted sweet potato fries and have roughly the safe texture.
I'ma devour the hell outta these~๐
And just for funsies, the inside of one of these.
That is some quality rising of choux dough right there.

I present to you my first try at chouquettes!
They... they're absolutely fantastic. And for the amount of effort involved they were relatively simple.
...I'm legitimately proud of myself for these.

Tonight on #ChefBadger we're makin' some mapo tofu.
While I don't have the ingredients to make it wholly from scratch I can kinda wing it with what I have.
Though sichuan peppercorns... I will find you one day.

Needs a smidgen more salt in my opinion but I can say that these are proper pickles! I feel successful!

Pan fried marinated tofu with furikake and scallions
Not the prettiest plating, but #ChefBadger goes on with some marinated pan fried tofu with furikake and scallions.
I think I let it marinate a little too long but otherwise it turned out grand.

Tonight on #ChefBadger a homemade meat and herb sauce with spaghetti.
My first attempt at a homemade sauce; a little too heavy on the meat but it turned out good.
I made it before Jim went in to the hospital. He wanted to try it when he got out.
Glad it turned out well. And I know he'd enjoy it.

New restaurant opened - MJ Teriyaki and my GOD it is fan-friggin'-tastic.
The food desert is getting filled now and I'm a happy and fat badj.

Cottage Pie! A lovely ground beef/pork/veal mix cooked with a sauce, some mixed veggies, and a puree'd cauliflower/russet mix with some butter and herbs and trying to still figure out how long to cook it to get that lovely crust.
Sadly - it'll be only cut later. Work soon!

These came in food shed today. Comes up as... sun gold tomatoes? A variation of cherry tomatoes I think.
What to do with them... tomato flesh doesn't agree with me for texture...
Would they make for a good sauce?

Burger was awesome but people... if your seasoning doesn't include salt in it... ADD SALT.

Chicken and Dumpling Soup
Tonight on #ChefBadger - made my first try at making a chicken and dumpling soup.
It's not bad - my texture issues required me to puree down the veg. Whole onion and celery activate my gag reflex but nasty.
Overall it isn't bad, but I think I wanna try a different recipe. Could be better.
Simple brekky but it's good. If I had to nitpick I'd say they cooked the eggs a smidge past over-mediun but other than that I'm finishing this plate.

Fresh kale chips
This morning on #ChefBadger - we have a bowl of leaves!
...wait.
No no - we got a couple bunches of kale for free and I didn't want it to go bad so... washed 'em yesterday. Let them dry overnight.
And my first hand at kale chips! And honestly? They're hella good.
Boring to look at, but good.

We got pork bao, gyoza, a lovely honeycomb platter (karate, edamame, tempura, takoyaki and agedashi) and some wonderful shoyu tonkatsu ramen.

Jerk chicken drumstick, seasoned jasmine rice, corn
Tonight on #ChefBadger - we did jerk chicken drumsticks with some seasoned jasmine rice and corn on the side!
It turned out really well - nice and hella moist!
Ghetto omurice
This morning on #ChefBadger - we did an incredibly ghetto attempt with an omurice.
Tastes fine - I know I can do better but I overestimated how much egg I needed.
Worked out flavor-wise though!
