OK. So, way better than my first ever attempt, but not entirely right.
The batter was too liquid, I need to revise the flour:milk ratio.
And for some weird reason I used the wrong pan and totally forgot to lightly oil it.
So my pancakes came out in chunks. ++

Bread dough is in the fridge to be baked later.
I also started bagel no-knead dough, first pic is yest and 2nd this morning, so it's fermenting nicely. I might make them as rolls and see how that turn out...

Getting my cooking mojo back on, which was something I struggled with last March after my hols in Spain, for some reason.

Feeling a smol smug as I've just put some thyme & parsley from the garden into my chickn stock pot.
& my Armabloodygeddon chillies r drying nicely. There's enuf here to keep me going for the next 10 yrs probably, bcos they are HOT!! but I may try & grow some from seed anyway.

Another wk of Clowning!
I've baked more noknead bread. Left the dough for 36 hrs b4 baking. Made with buttermilk. Very happy with that crumb. The dough lookd flat b4 baking but rose like a good'un. Half white spelt flour.

Taking this idea and runnimg with it. No-knead bread sough. I habe no white spelt so this is half light malthse flour and half sunflower and something flour. So it's going to be a very brown loaf & it already smells lovely and malty. I hope it rises enough ++

Good golly, that was a lush roll!!
Just had a bit of butter on it.
Lovely soft top but bottom was a bit crunchy. But they were on the bottom of the dutch oven. Maybe use the rack next time.

ANYONE TRIED making this, from Diners Drive-ins & Dives? Another thing I've been obsessed with trying.
I tried it today, pretty easy: tinned tomatoes, oil, garlic, honey, salt & chilli.
I overbrowned the garlic a bit, altho it didn't look it but I cld smell the bitterness.

VERY feisty dough, but I always worry I am going to overproof, so these bois are gonna sit now for a couple of hrs b4 baking.
I had the dough in the fridge overnight b4 lifting it out so it prob wld have been ok til this evening...but I still got nervous.

Might be getting a little obsessed with the pasta making.
What I have learned is that if u have pasta dough made with 100g flour, divide it into 4 and roll out each piece as thin as u dare. And when u think it's thin, do it a bit more. ++

MY SPECIALITY FLOURS, specifically chestnut flour, has arrived. I shall use it in pasta making.
I celebrated by using some homebaked bread to make a cheese & ham toastie, which is looking pleasingly golden instead of my usual beige effort.
