Once mixed, serve. Touch more black pepper for me and a tiny bit of Parmesan. Tho it didn’t really need it the sauce is pretty cheesy.

Spoon in the cream cheese and yogurt mixture and stir through. Once it warms a touch it’ll thin out making it easier.

Drain the pasta when cooked, and add pasta to the mushroom and onions with a touch of the water

Have added a couple of spoons of the pasta water to it to loosen.

I’ve added a bit of grated Parmesan and more black pepper to my cheese and yogurt mixture. Cause.

Chuck your pasta in to cook. Salted water obviously, we’re not animals.

While that cooks (add a splash of water if you need to) mix together the cream cheese and Greek yogurt. Season.

And then add another touch of oil and add the chopped mushrooms.

Chop and lightly fry the shallot. Pay attention and don’t let it brown. U like me.

And when you’re happy, serve and top with MOAR cheese because there’s always a need for more cheese.
Chorizo, roasted butternut squash and (chickpea) orzo because I didn’t have risotto rice. Done.

I’ve added a chunk of frozen spinach because I can’t be arsed cooling broccoli for the side. And I’ve added the mushroom water / stock. Let the rice absorb.

Then add some white wine and let the rice slowly absorb that

Add the orzo / risotto rice and coat it in the butter and delicious chorizo fat

Let all the delicious flavour out of the chorizo, and get ready to add your risotto rice - or in this case orzo because I’m a massive twat and we don’t have any fucking risotto rice

Right chorizo is skinned chopped and added to the pan. I’ve turned the heat up a tiny bit as I can watch it now.

I’m also soaking some mixed dried mushrooms for stock

Next I’ve chopped a large onion and some garlic and chucked them in to a heavy bottom pan with butter and a touch of olive oil.
Will let the onions cook down while I chop the chorizo.

So tonight we’re making a chorizo and roasted butternut squash risotto. Forgot to take a starting pic of ingredients but step 1 was chopping butternut squash, spraying with oil and roasting. Mine went in the Airfryer.

Hmmmm. I don’t know what it is, but something doesn’t taste good. I’ve added some Worcester sauce and a touch of sugar & seasoning. Going to turn the heat off now and let it sit and come back to it in a while once it’s cooled. #DinnerWithDawbes
That’s sat on onions carrots celery garlic and rosemary with a couple of dried mushrooms added to give some depth to the juices as I’m hoping to make gravy from the liquid.

Meanwhile, the lamb has been in the slow cooker since about 11ish, maybe 12ish by the time I got my shit together. Few more hours slow cooking to go for that.
