Mediterranean Style Couscous Salad

I used left-over couscous. The vegetables are tomato, zucchini that was boiled a bit of time, shallot, Italian parsley, mint, frisée on the bottom and feta cheese on the top.

The end of a cut of baguette, showing a tight but not fully closed crumb on the right in the cut area, and similar on the left - it was a clean tear. It also shows an even light brown colour, with flecks of green, which happens when you dry your spinach yourself vs. get store-bought, which I guess has more dust in it? I don't know.

Belated followup: I could taste the extra cheese - half again more is a lot, really. I think the bread became more dense, but not overly so, and that's all fine. I do worry about it becoming _too_ much more dense if I went any further with the feta […]

I used more than the usual 1/4 cup feta because I had a bit left (like 1/8th cup?) so I just threw it all in. more cheese, how can it be bad?
