That worked out great. #SourdoughBread with my starter #Seppl and the home milled and unsifted red wheat and dark rye flour at 78% hydration.

One bread in a loaf pan the other in a cast iron bread pan.

All ready to mix sourdough tomorrow. Milled and sifted 2400g of flour. A 6:4:1 ratio of Rouge de Bordeaux, spelt, and rye. This should give me enough for four bakes when mixed with strong bread flour at a ratio of 6:4
