Maize 玉米 is of American origin, introduced to China in the 16th century, Ming 明 dynasty through Fuijan 福建. Mainly cultivated by ethnic minorities in hilly, mountainous regions in the south, but Migrants from the populous Yangzi Valley began to cultivate maize in the hills and Mountains of Sichuan 四川, Yunnan 云南, Shanxi 山西, Hubei 湖北 and Henan 河南 from the 18th century, forests were cut down for cultivation. Maize was dried on wooden racks on the farms, preferably indoors, and then dried in the sun as soon as it was free of moisture. Mainly used as animal feed, but also as cornmeal. Since 1949, maize production has increased enormously, especially in the north-east region 东北. Farmers were paid above-market prices to boost production, with the result that huge stocks were built up. By abandoning the system the stocks were reduced by 2020, bit due to flooding, imports of maize on the world market were necessary.
