Michel Suas' "Advanced Bread and Pastry" textbook, lying on my living room floor. I've just finished reading the Viennoiserie section, so there are a bazillion sticky notes annotating key go-to, reference locations.

I love this book.

I woke up early, so spent my time reading the Viennoiserie section. Came up with several ideas re: how to recover from yesterday's rather tragic 1st attempt at croissants.
