DOUBLE COCONUT CAKE
Cooking spray
I T cake flour
2 1/4 c sifted cake flour (If you don't have cake flour, substitute all purpose flour. For every cup of all purpose flour, remove 2 T)
2 1/4 tsp baking powder
1/2 tsp salt
1 2/3 c sugar
1/3 c butter, softened
2 large eggs
1 (14-oz) can light coconut milk
1 T vanilla extract
2/3 c coconut
Preheat oven to 350°. Coat 2(9-inch) round cake pans with cooking spray; dust with 1 T flour.
Combine 2.25 c flour, baking powder, and salt, stirring with a whisk. Place sugar and butter in a large bowl; beat with mixer at medium speed until well blended (for about 5 min). Add eggs, 1 at a time, beating well after each addition. Add flour mixture and milk alternately to sugar mixture, beginning and ending with flour mixture. Stir in vanilla. Pour batter into prepared pans. Sharply tap pans once on

FROSTING
3 c confectioners' sugar SIFTED
1 c unsalted butter softened (2 sticks)
¼ tsp salt
1 tsp vanilla extract coconut flavoring
1-2 T whipping cream
In a standing mixer fitted with a whisk, cream butter for a few min, med speed; mix together sugar and butter. Mix 1st on low speed until well blended and then increase speed to medium and beat for another 3 min. Add vanilla/ coconut flavoring (salt and cream and continue to beat on medium speed for 1-3 min more, adding more cream ONLY if needed for spreading consistency - watch! May get too thin. If frosting needs to be stiffer, add more sugar. If your frosting needs to be thinned out, add milk 1 T at a time.
