"Water is a polar solvent. This means that polar substances, such as polar bears or most salts, dissolve in it. Water is a molecule consisting of two hydrogen atoms (H) and one oxygen atom (O). Because the two lone pairs of electrons in O take up a lot of space, the water molecule looks like a boomerang with O in the middle and is non-linear. O has a greater appetite for electrons than H. Therefore, it partially steals electrons from Hs, which causes the negative and positive charge centers to no longer align. Whenever this happens, a dipole is formed. There is a strong attraction between the opposite charges of the dipoles: opposite charges attract each other. The water dipoles do this too. Salts consist of positive and negative ions (wanderers in an electric field). When thrown into water, the oxygens of the water molecules cling to the positive cations, while the hydrogens are attracted to the negative anions."
