There are some really good plant based "egg" alternatives today. I personally like and use these; Yo Egg "Eggs Benedict" or Just Egg 🥚

If you can find this product, I highly recommend you try it "Juicy Marbles" ...I would serve their filet to my non-vegan friends and they would not even know it. I have lamb and pork in my freezer that I can't wait to try.
