Today's #ketobeautiful is zucchini wrapper ravioli with pork meatballs. I haven't attempted these before, but I think it worked out well. I see a pot sticker with this approach in the future.

180Z CAN OF SLICED WATER CHESTNUTS, CUT INTO HALF MOONS
1/2 CUP CHOPPED ROASTED PEANUTS
2 TBSP BLACK SESAME SEEDS DIRECTIONS:
STEP O - PREP
IF YOU CAN'T GET YOUR VEGGIES PRE-SHREDDED/SPIRALED/JULIENNED/ OTHER WISE PREPPED, GO AHEAD AND DO THAT NOW!
STEP 1 - NOODLES
BRING A LARGE POT OF WATER TO A BOIL. ADD NOODLES AND COOK UNTIL TENDER. THEY SHOULD RETAIN A HINT OF CHE WINESS. DRAIN, RINSE WITH COLD WATER, DRAIN AGAIN, AND TOSS WITH A SPLASH OF SESAME OIL.
STEP 2 - SAUCE
IN A MEDIUM BOWL (OR JUST USE A FOOD PROCESSOR AND AVOID NEEDING TO GRATE THE GINGER AND MINCE THE GARLIC,) BLEND TOGETHER THE SESAME OIL, SOY SAUCE, RICE VINEGAR, SESAME PASTE, PEANUT BUTTER, HONEY, GINGER, GARLIC, ORANGE JUICE, AND CHILI-GARLIC PASTE.
STEP 3 - COMBINE
POUR THE SAUCE OVER THE NOODLES AND TOSS. ADD ALL THE VEGETABLES AND TOSS AGAIN. TRANSFER TO A SERVING BOWL, AND GARNISH WITH BLACK SESAME SEEDS AND PEANUTS.
BEST EATEN CHILLED, ONE DAY AFTER PREPARATION, BUT THEY'RE PRETTY TASTY WHEN THEY'RE HOT AS WELL!“
