Various choices once you select Customize and Reorder on iOS 18’s new photo app. The user is showing that she has Media Types and Albums selected to make it feel like the old iOS photo app.

If you got updated to iOS 18 and hate the new photos app you can scroll ALL the way to the bottom and select “Customize and Reorder” and the mess around with selections there.

I found Albums and Media Types gave me the most similar feel.
