Recipe card for McGee Mango Sticky Rice
Ingredients: 1 Fresh Mango, 1 cup Sticky Rice, 1 cup Coconut Milk (Unsweetened), 1/4 cup Sugar, and 1/4 Teaspoon Salt
1. Soak rice in water for 1-2 hours.
2. Steam rice in steamer or rice cooker for 20-30 minutes. Make sure the middle is soft.
3. While waiting, pour coconut milk into a small pot & turn it on medium heat. Add sugar & salt and stir often until all is dissolved & boiling. Turn off heat & cover until needed.
3.5. You can make a second batch of the sauce & save it to pour on top of the finished dish for extra flavor).
4. Once rice is done, move it into a larger bowl & pour the sauce over it. Cover & allow the rice to absorb the sauce for at least 5 minutes.
5. Peel mango skin, then cut into slices.
If you have a heart shaped cookie cutter, place it on a plate & scoop the rice into it for a firm heart shape. If you have no such cutter, scoop the rice and use a spoon or rice paddle to mold it into shape. Then take four mango slices and arrange them into an 'M' shape for 'McGee'. Bonus: If you made a second batch of the coconut sauce, pour it over the rice for extra flavor!
