Butterflied flank steak that has been pounded flat. It is sitting on two sheets of parchment paper. It has a layer of Parmesan cheese, and a blend of chopped rosemary, parsley, and thyme, salt, pepper and lemon zest.
The same flank steak. I've added a layer of baby spinach and have rolled the steak into a log then tied it off into sections with kitchen twine.
Same steak that has been cut between the twine to create pinwheels of green and white along with the red of the meat. There are 12 pieces laid out on a baking sheet.
The steak pinwheels cooked, cut in half to show the doneness of the steak (outer sear, inner parts are reddish pink, was cooked to a medium rare, pictures didn't pick up the coloring well.) and plated with rosemary roasted baby potatoes, a side salad and a cut ciabatta roll.
