Fresh green apple, bone - drinkable and crisp.

Opened up - straight up flowered - with an oyster michelada. Made it explode.

3.5 ⭐ for now, but need to try it by itself.

Apple, crisp, then a bit of bone. Highlighted the brioche that a gamba tartar was sitting on.

Very drinkable but not sure if I'd get it by itself.

Pressing day for the piquette after seven days fermenting on the skins. I don’t know if I’ll keep doing this when all the newly grafted #Parellada start producing fruit, but for now it’s a way to stretch production…

Choosing to graft myself might be a double edged sword. On the plus side, it gives me the opportunity to replace the dead #Parellada clone 1-42 with a better local clone, & replace some of the #Syrah with more Grenache. On the negative side, I have to do all the grafting…
