The beets were roasted and let cool down- chopped finely and blended with little water- then sieved down to form a puree type paste as fine as possible.
Classic pasta dough technique to follow, one egg, one equal size amount of beetroot puree, 200gr of 00 flour.
Steer and mix with a fork, until all wetness disappear
Knead for 10-15 mins to work the gluten and form a ball, cover in cling film and store in the fridge.
