Steamed Eggplant with Ankake/Thick Meat Sauce

I used huge American eggplant that has tough skin, so I peel the skin off. If you use Japanese or Chinese eggplant, you don’t need to peel the skin. The sauce is thicken with cornstarch.

Steamed Eggplant Salad

Peel off the skin of steamed eggplants and cut roughly. Mix them with red, orange and yellow peppers, tomatoes, chopped capers and feta cheese.
