Queso: In a broiler, roast 3 poblano peppers until the skins char. Remove the skin, stem and seeds. Chop. Cook chorizo. I found it necessary to chop into smaller bits. Melt Monterey jack in a skillet. Stir in chorizo and poblano.
Served over a homemade tortilla with pieces of avocado
🍽️In celebration of #Mexico's victory over the French at the #BattleofPuebla (1862), I made queso flameado, something we used enjoy (at #Ninfas) when I lived in Houston.
Chorizo sausage, poblano pepper and Monterey jack served over a homemade #tortilla. I added avocado bits to smooth it out.
