Eight tea cakes pictured from above. They are beautifully bronzed (thanks to the egg wash) and the small specks of chilli flakes look quite festive.

Same place, same breads, taken from a lower angle, to show that they are nicely plumb but not very high-rising.

I shaped them differently (10cm by 15cm), because I want to have them as an almost sandwich.

I like a fruit and cheese combo (and these breads are packed with raisins and sultanas; 100gr of each went into the dough!)

I'm not a big fan of the sweet stuff but I didn't dare to leave all the sugar out. I know that, apart from delivering sweetness, it also gives structure to the dough.
So I added the chilli flakes to form a bit of contrast to the sugar; after all, in the Cantonese kitchen spicy & sweet is a well-loved combo.

I halved the sugar and made the 'cakes' longer & wider than usual. I also sprinkled the dough generously with mild chilli flakes, after applying an egg wash.
