Cold smoked salmon today. It’s my first time cold smoking salmon, and it’s quite the process. 48 hours curing, rinse, dry, air dry overnight in the fridge, cold smoke for 2 hours, wrap in butcher paper overnight. It’s dinner for tomorrow.
