Mills were among the most complex machines people in sixteenth-century Germany built. They produced power for various industrial processes, most often to turn millstones that ground grain. The grieß for our recipe would have been produced in one such mill.

Some recipes hint at backstories. This one comes from Meister Hans, the exchequer's servant, who apparently liked baked #custards and made roux with #grieß.
