Got Extra Potatoes? Here's how to plant them!
Have potatoes with little roots growing out of them? Those are called potatoes eyes, and they mean those potatoes are ready to be planted!
This works best in North Carolina during the fall and spring, but potatoes can be grown year round if they're in a cool area in your home.
Cut potato into chunks around each eye. Let them dry for a day or 2, or until they form a callus over where you've cut them.
You can plant them in large containers or directly in your yard. Wherever you plant them, make sure they'll get plenty of sun. If you're planting in the yard, place them about an arms' length away from each other. Dig down about 8 inches and plant them with the eye pointing up, then add extra soil on top in little mounds.
Water once a week until the leaves poking out of the ground look dry or yellow. Now they're ready to harvest and eat!
To allow potatoes to store better, keep them out of direct sunlight for two weeks after harvesting.
