Two pork cheeks on a quarter sheet aluminum pan doused in the herbs and salt.
Making another batch of guanciale. Two cheeks with rosemary, sage, garlic, pepper and salt. Two others will have that plus nutmeg, allspice & cinnamon. Week of dry brine, white wine bath and then one month hang in the wine cellar.

Got pig cheeks from the butcher so can make guanciale again. Drying rosemary and sage from the garden in the dehydrator. Then a long month of waiting. Going to make pasta carbonara tonight with home made pasta. Haven’t used the pasta machine for ages.
