Grand Opening at Needle Creek Farm Brewery
<p>Bhavna and I do not celebrate Valentine’s Day. Why celebrate your love by doing something special once a year? What are you doing on the other 365 days? It just so happens that <strong>Needle Creek Farm Brewery’s</strong> opening day was on Valentine’s Day, and that’s what brought us out for craft beer in a historic barn. On <strong>February 14, 2025</strong>, we attended the <strong>Grand Opening of <a href="https://www.needlecreek.com/">Needle Creek Farm Brewery</a></strong> in <strong>Pennington</strong>. Set on farmland with deep historical roots, Needle Creek blends brewing tradition, sustainability, and a welcoming atmosphere into something truly special.</p>

<p>As we pulled up to the <strong>red barn with white trim</strong>, the rustic aesthetic immediately set the tone. The barn itself, dating back to <strong>1713</strong>, has been lovingly restored, preserving its weathered wood beams and giving it a sense of history. <strong>A blue sign with their logo—twine wrapped around a beer stein—marked the entrance.</strong> This wasn’t just a brewery; it felt like stepping into a piece of the past, modernized with a craft beer heartbeat.</p>

<p>Stepping inside, the warm glow of string lights and <strong>rustic wooden beams</strong> created an inviting atmosphere. The interior of the barn balanced history with modern comfort—exposed wooden rafters, <strong>reclaimed wood tables</strong>, and a polished bar top crafted from aged timber. The high ceilings and natural light filtering through the windows added to the <strong>open, airy feel</strong>. Industrial touches like metal bar stools and hanging Edison bulbs complemented the <strong>farmhouse aesthetic</strong>. Live plants and carefully placed decor softened the space, making it feel both<strong> cozy and contemporary</strong>, a perfect setting to enjoy a pint and good conversation.</p>

<p>At the bar, housed inside the barn’s old wooden framework, the <strong><a href="https://brookstonbeerbulletin.com/historic-beer-birthday-peter-austin/">Peter Austin</a> Brick Kettle Brewing System</strong> was at work, transforming locally grown barley and <strong><a href="https://www.rabbithillmalt.com/">Rabbit Hill Malt</a></strong> into fresh, farm-born beer. Needle Creek prides itself on a <strong>zero-waste brewing process</strong>, with spent grains feeding their animals and wastewater used for field irrigation. That kind of sustainability focus is rare, but it’s becoming more common among small, passionate brewers like this.</p>

<p>We sampled a <strong>flight of beers</strong>, each with its own unique character. The <strong>tasting flight</strong>, served on a rustic wooden paddle, showcased a <strong>spectrum of golden ambers, hazy oranges, and deep browns</strong>. The standout for me was Bhavna’s favourite, <strong>Hops in the Hen House (IPA, 5.9% ABV)</strong>—bursting with fruit and melon notes, balanced by a smooth, oat-backed juiciness.</p>
<p>I enjoyed <strong>The Blonde Cow (Dirty Blonde Ale, 6.3% ABV)</strong>. Lightly hazy with a soft sweetness, its hints of <strong>orange peel and coriander</strong> gave it a distinctly Belgian-inspired finish. It reminded me of a <strong>Witbier</strong> but with a bit more heft.</p>

<p>For those who prefer maltier brews, <strong>Post & Beam (Ale, 5.1% ABV)</strong> delivered a balance of <strong>roasty malt and noble German hops</strong>, making it a smooth, easy drinker. And if you like classic Belgian styles, <strong>Wandering Plowman (Belgian Single, 6.1% ABV)</strong> brought <strong>apple and pear esters</strong> from its Belgian yeast, finishing clean and crisp.</p>

<p>As we enjoyed our beer, I couldn’t help but appreciate the <strong>layers of history woven into this brewery</strong>. The barn’s original beams surrounded us, glowing under soft lighting. Outside, the <strong>silo stood tall</strong>, a reminder of the farm’s past. This isn’t just a brewery; it’s a family legacy.</p>
<p>The <strong>John Hart connection</strong> adds another fascinating layer. John Hart, a signer of the <strong>Declaration of Independence</strong>, was an ancestor of the farm’s current owners. His <strong>great-great-great-great-grandson</strong> still farms here today, growing the barley that eventually becomes the beer we were sipping. That’s <strong>farm-to-glass in its purest form</strong>.</p>
<p>Looking ahead, Needle Creek has plans to expand its offerings. A <strong>private indoor room</strong> for 12-20 people is in the works, set inside a <strong>former grain silo</strong>, adding a unique setting for small gatherings. Additionally, a <strong>covered outdoor patio</strong> with a service window is planned, making it even easier to enjoy a beer outside, rain or shine.</p>

<p>What sets Needle Creek apart isn’t just the beer—it’s the experience. Next to the brewery is a <strong>general store and butcher shop</strong>, housed in a repurposed <strong>former milk house</strong>. They offer a rotating selection of <strong>pastured meats, bacon, sausage, and even ice cream</strong>.</p>

<p>A <strong>food truck parked outside</strong> added to the casual, family-friendly feel. We grabbed some <strong>hot dogs from “Relish the Dog”</strong>, a vendor supporting local ingredients. As we were leaving (we decided to head over to Flounder Brewing), I ordered a <strong>“to-go” hot dog</strong> topped with onions, red sauce, and <strong>Carolina Reaper relish</strong>. When I ate it later at Flounder Brewing, <strong>holy shit, my mouth was on fire!</strong></p>

<p>The <strong>picnic table seating</strong> gave off a communal, casual vibe, perfect for gathering with friends over a pint. <strong>A fire pit in the beer garden</strong> invited visitors to linger a little longer, even in the February chill. I could imagine people gathered around, sipping beer, chatting, and even roasting s’mores. I could imagine that as the evening settled in, the <strong>fire pits would glow</strong>, conversations linger, and beers savoured. There was an easy-going energy—exactly the kind of atmosphere you want from a farm brewery.</p>
