4 cups of Walnut halves 3-4 Tablespoons of neutral oil (seed oils, avocado, etc) 1 Tablespoon of ground cinnamon 1 Teaspoon of Chinese five spice powder ¼ Teaspoon ground cayenne pepper 1½ cups of Confectionery Sugar, packed. (~275 grams icing sugar) Preheat oven to 325⁰F/ 160⁰C. Lay out nuts in a single layer on a parchment or silicone lined jelly roll pan. Bake dry in oven for no more than 5 minutes. You want them lightly toasted, and warmed through-- not burnt! Pull out and transfer to a large bowl. Using a spoon coat the nuts in oil first, drizzling it in. When well coated add warm spices first. Gently stir again until buts are evenly coated in spices. Add sugar a few tablespoons at a time, stirring after each batch of sugar. Transfer back to the pan and spread out again until fully cool. [About 15 minutes]. Store in airtight containers, out of direct sunlight. Good for 2-3 months.
