another six months of aging and the clarity is just brilliant. It seems to have partially carbonated since the last time I checked, still tastes great.

Lemon wine is bottled and soooo good!! i'm really pleased with how the color and clarity came out, I didn't have to use a clarifying agent at all!

I'm going to bottle this batch and let it sit until it sounds good. Probably another month or so.
In the meantime, I've started on a new batch, but used whole lemons and limes, with raisins added to feed the yeast, and that one is SUPER active already!

1 teaspoon of DAP - diammonium phosphate. Yeast energizer!

Lemon Wine, attempt #2! 1 gallon batch this time, hoping it's easier to manage temperature. 32 ounces lemon juice, 15 ounces lime juice, 3 pounds sugar, 1 tsp DAP, add water to make a gallon total. Pasteurize, then into a glass carboy. SG 1.13! Pitch yeast in the morning, EC-1118 again

Well, the yeast is definitely alive now! Fermentation wasn't starting so I pitched another 9 grams of yeast and put her in a hot water bath last night. Raised the temperature to mid-80s and there she goes!

"Wine" usually means grapes, but it can be any fermented fruit! Let's make some lemon wine!
This will be a 5 gallon batch, and is actually being started today - I will post updates with additional steps as needed.
