OK, so I kind of lied there is just one more post. My finished #MoleSauce (3/2) 🍜🍽️
A bowl with chopped Roma tomatoes, onions, garlic, and plantains. Missing is the two pieces of pan fried white bread.
Some duck fat.
A pan with the dark chocolate and some water to help the chocolate melt without burning it
The miss en place for this #MoleSauce is definitely a bit of work but the result is so worth it. (2/2)🍽️🍜
A bowl of dried ancho, guajillo, mulato, chipotle, and papilla peppers, with stems and seeds removed.
A bowl with cinnamon sticks, cumin seeds, coriander seeds, allspice berries, white and black peppercorns, and anise seeds.
Sultana raisins, sesame seeds, peanuts, pumpkin seeds, and sunflower seeds. Not shown are sesame seeds, all the rest are going to get toasted and it's way too easy to burn the sesame seeds and ruin the dish
