Perhaps not truly in the tradition of #ShroveTuesday #PancakeTuesday & Lent but the kettle is almost boiled for coffee to enjoy with my two deliberately set aside pancakes from last night. Nothing like cold leftover pancakes & hot coffee for breakfast.
Crepes with a little bit of grated Parmesan cheese on top.
Secrets revealed! Under the hood we have a mixture: a cup or so of broccoli fried briefly in olive oil with a fistful of chopped spinach. Pulled it and browned 1 pound ground turkey with a chopped onion, some garlic, cayenne and a couple good teaspoons of Lowry’s lemon pepper. Deglazed with fresh lemon juice. My crepe recipe is straight out of The Joy of Cooking (no sugar). The sauce is just 1.75 cups of ricotta cheese with a third of a cup of cream and the zest of a lemon beaten by hand.
Wouldn’t be #MardiGras ( #PancakeTuesday for my Brits) without #crepes now would it? Ground turkey lemon ricotta crepes with broccoli, spinach and mushrooms. Laissez les bons temps rouler!
