Let's thank the Ilocanos for bringing us this wonderful dish. Pinakbet is another famous Filipino dish of stewed vegetables with shrimp paste. Typically the vegetables are bitter gourd, okra, eggplants, string beans, and usually with squash.

Pinakbet and Bicol Express.

Bicol express is from the resort's restaurant while pinakbet was from a roadside eatery where we had lunch. I just liked it so much.

There were a lot of hiking on this trip so I think I'm gonna gorge.
