Being that it is now Spring, regardless my health, I will be posting more like this, in the coming months.
All my perennials are cleaned up and popping
I am waiting, impatiently, to plant vegies

Its 1:20am on Sunday morning.
I can't sleep; so, I have given up.
I could rant politically. I could write; or, I can make an Italian sausage and beef pasta sauce with insane peppers and purple tomatoes.
Yep.
Cooking at 1:30am.
It could help.

Got the yard all cleaned up, mowed and weed eated; and, fertilized all the perennial pots.
All ready for vegies to be planted, in a week or so.
We'll see how the weather goes.
Still have to hang all the spring garden kitty flags 😽

1lb of ground beef, seasoned with oregano, thyme, paprika, black pepper, onion powder, garlic powder and de arbol chili powder. Seared nicely; and then, add in the vegies. A bevvy of peppers. Red, Green and Orange Bell Peppers, Serrano, Fresno, Jalapeno, and Habanero peppers. A large tomato, half a small white onion, garlic, oregano and thyme.
Added in one 14.5oz can of diced tomatoes and an 8oz can of plain tomato sauce. Let simmer.
Add in about 12oz of elbow macaroni and one more 8oz can of tomato sauce. Let sit for ten minutes. $10 to $12 feeds about 6. As Jean Claude used to say, 'just because you are poor, doesn't mean you have to eat like it.'
When I'm not feeling well, one of my comfort foods is any kind of red pasta sauce dish; or, my own chili.
Last night it was, for lack of a better name, Mac 'n Beef.
Part of the process of feeling better is just in the making of things.

Invariably, when I can't sleep, at like 3am, what I end up salivating for is meat.
I don't know why.
Its my birthday, and, I wanted a real corn beef sandwich; I went and got a brisket and, voila, I am now sated.
The cats seem happy. 😼
