The basic underlying problem is that coders and their tooling assume that code is mostly ASCII, when in reality it is Unicode, which most tools don't handle properly.

I’ve used BBEdit and TextWrangler since the 90s on my Mac. I recently switched to TextMate, an open-source alternative, because I rarely use it, and there’s always a paid upgrade.
Normally, I use a dedicated Markdown editor, Word, or VSCodium; I seldom use plain text editors.
