The master butcher, dressed in fashionable slashed and puffed clothing, is raising an axe for the stunning blow. His assistant, wearing a work shirt, is holding the animal by its horns to steady the head. Both men have sheaths holding multiple knives attached to their belts showing their profession.
Today, two recipes for the same ox tongue pastry from different sources, both from Augsburg c. 1550. We have few other places with that much material to work from.
