Made Cuban lime sugar cookies for a get-together with friends Saturday ^^ if they look green, that's cause they are -- like zest! Rich and delicious, and I put a little dot of guava paste in the center of each.

Baked a lovely cream cheese tart with fresh kiwi and blueberries for @toby.nookpup.gay's birthday party ^^ first time making a tart! Was lovely with a shortbread-like crust. Glazed with thinned apricot jam. ^^

Since I was stuck here I baked a cheesecake for my parents -- triple-ginger snaps with some cinnamon for the crust of a vanilla-espresso zebra cheesecake. It was lovely. :kay_happy:

Results from tonight's baking: red bean rice cake and strawberry matcha rice cake! Both done like western cakes, but using sweet rice flour. Outstanding! And chewy like mochi! It's like a hybrid between cake and mochi! 🧡

Photo of about a third of a 9-inch cake. The top is a crispy, lightened chocolate hue, and the body looks like a light brownie almost but with a melty core under the surface.
The remains of the cake today. Very crispy on top, shockingly light. I imagine if I baked it low and for longer to set it through, it'd be almost like a set chocolate mousse. Shockingly light. Will make again!
