Served as refreshment at a coastal retreat during the hot Australian Summer, this vegan ‘Eton Mess’ consists of succulent red raspberries, weightless wattle seed meringue and silky smooth coconut ice-cream. Eton mess began as a traditional English dessert consisting of a mixture of strawberries or other berries, meringue, and whipped cream (or vegan equivalent). First mentioned in print in 1893, it originated from Eton College, to be served at the annual cricket match against the pupils of Harrow School. Cricket, after all, can be a blood sport. The word ‘mess’ is a nod to the appearance of the dish, but may be used in the sense of ‘a quantity of food’, particularly ‘a prepared dish of soft food’ or ‘a mixture of ingredients cooked or eaten together’.
