Inspired by a recent post from @fascinatedbyfungi.bsky.social, I braised a variety of mushrooms we found with chicken stock, miso, porcini powder, thyme and bay leaves. I served that over chicken thighs and mashed potatoes.

I sauteed up the rest of the oyster mushrooms and midnight entoloma that we found last weekend for our ramen tonight. The broth is Ji's Ssamjang and soy sauce. I topped it with the best kimchi, Ji's Habanero Kimchi 🍜
