#sourdoughbakers This is today’s sweetheart. She exists of 80% of French T65 flower, 10% rye and 10% einkorn flower. I bake my bread daily for three years now adding as little as possible to the natural process.

A domed round loaf of sourdough with concentric circles of rice flour on the surface. It's been cut in a straight line on the top so has cracked open in the oven and the edges are deep golden brown. It's sat on a metal cooling rack on a very dark kitchen surface.

Half white and half granary sourdough loaf just out of the oven...it's very gently crackling to itself if I put my ear to it.
Any #sourdough folk know what that is making the tiny sounds?
