今日も昨夜仕込んだ中種でパン焼き。今日は生地を基本の分量の2倍にしてジャガイモ明太子と海老グラタンの2種類を作りました。
うちのガスオーブンでは本に載っている焼成温度だと火が強過ぎるようでまた焼き色が強くなっちゃいました😅　次回作る特はちょっと温度を下げて焼いてみます。

今日は「数日前にモンブランケーキを作った時に余ったモンブランクリームを使い切る為」という名目でクッキーシュークリーム作り。最近新調したアルミの天板で焼いたら今までより明らかに膨らみが良くなった✨
シュー皮を冷ます間に生クリームを温めてバニラビーンズとラムで香り付け、そこにホワイトチョコを入れてしっかり溶けたところでボウルを氷水に当てて泡立ててホワイトチョコホイップクリームの完成。シュー皮にホワイトチョコクリームをたっぷり詰めて、モンブランクリームもセンターに絞って出来上がり。

今日は超久々にアメリカンなケーキがちょっぴり恋しくなって発作的にココナツレイヤーケーキ🥥を作っちゃいました。
分量を半分にして更にお砂糖も減らしてバタクリにはラムを入れたり少しアレンジしましたがYouTube のClaire Saffitz x Dessert Personのレシピを参考にしました。
見た目よりかなり軽くケーキの生地もフワフワしっとり。なかなか美味しいケーキでした☺️
