Made "Baked Chicken Katsu" again for dinner. Super-easy and healthier than deep-frying. Thanks to my friend @kchew.bsky.social for telling me about #JustOneCookbook.

A dark green squash cut in half lengthwise, showing its bright orange flesh and fibrous seed cavity. The halves sit on a wooden chopping board on a kitchen counter.
Slices of cooked squash with ground meat in a frying pan. The squash pieces are soft and golden-orange, with the green skin still attached, mixed together with browned crumbles of meat.
The first of my five kabocha squash is off the vine, and into the pan. It’s very good in this stir fry following a #justonecookbook recipe, only I had to sub beef for pork mince because that’s what I had.

A wok full of bright green sautéed pea shoots. Glossy green leaves and lighter stems are slick with garlicky oil. This picture makes you crave green vegetables. You will now Green Goon. (Eat your greens!)
A cauldron (lodge brasier) bubbles with dark and glossy brown sauce. Strips of lamb Bob about, flecked with green onions and chilis. Oh my goodness it’s so sticky and good.
A wokful of ribbony yellow noodles, tinged brown with a soy-based sauce. Heaps of wilted green bok choi nestle in the centre. Scattered about are juicy strips of brown mushroom and tasty dark nuggets of beef. Oh baby, this is some noodles for YOU.
The time between a medical test and receiving the results can be fraught and fearful. It’s best spent making some delicious Chinese food. Here’s some garlic pea shoots, “Mongolian” lamb (Aussie takeout style) and Lazy Noodles. #woksoflife #justonecookbook
Shoutout to #justonecookbook .. followed your miso soup recipe to the Letter and made the best miso I’ve ever had, and that includes restaurants. Holy moly.
