Speckklöße (bacon dumplings) are basically traditional Kartoffelklöße (potato dumplings) with bacon mixed into the dough. I added onion, garlic and sweet pepper. The dough is the same Kloßteig halb und halb (half raw potato and half boiled potato). I serve them with a sauce of mushrooms - champignons, king oyster mushrooms and shiitake. The dish is vegetarian but not vegan as I add cream.
Nearly forgotten in the fridge there is a glas of wine left in a bottle of the wonderful 2015 Saumagen Spätburgunder from Weingut Rings. Excellent companion for both potato dumpling dishes, especially with the Speckklöße.
Wine & Dine
Klöße (Kloesse)/Knödel (Knoedel) are basically the same - dumplings. In southern Germany Klöße are mailny made of potatoes. In some regions also made of bread rolls (Semmelknödel). They can be the main dish or the side dish to go with porc or beef roast.
