It has a label picturing some chillies and the following words: Carolina reaper sauce September 2025 Orange peppers White wine vinegar Cumin powder Tangerine juice Carolina reaper chillies Tomatoes Ingredients: 2 bags (3kilos) ASDA Crunchy & Flavoursome Peppers (these are really cheap and I was lucky to get them all the same colour) 1 bulb garlic (optional) A few shallots (optional) 1 tbs cumin powder Juice of 3 tangerines (or any citrus) 3 tomatoes (just what I had) 1L white wine vinegar (just cheap stuff) 3 carolina reaper chillies (or to taste) Method Cut peppers in half, deseed, pack into roasting trays with peeled shallot and unpeeled bulb of garlic cut in half (if using) , drizzle with olive oil and roast at 180 until peppers 'slump' and are slightly charred at edges (mine took about 40 mins). Put peppers, squeezed out garlic cloves and shallots in a large pan with citrus juice, cumin powder, quartered tomatoes and vinegar. Some recipes want you to peel the peppers. I don't peel anything, it's a faff. Bring to the boil then let cool slightly, add chilis, salt and pepper to taste. Put on a mask, open your windows and blend the lot with a stick blender until smooth. Thin with more vinegar if wanted. Pour into sterilized bottles. Some recommend roasting the reapers but I never have as I pickle mine and I worry that roasting might gas the flat! Leave for 3 weeks before eating to allow flavours to cure. Happy eating!
