Written by Sunny: Ok it starts with 2 giant, fresh beets!! We gonna peel and slice think, lay it out in a baking dish like a roasted pork tenderloin or nice roast beef. And den!! We gonna fill the pan with onion, sweet potatoes, potatoes, carrots, spices and herbs! It’s just like a yankee pot roast! Only it’s vegetarian and it’s all about celebrate the harvest by getting back to the root of it all - Pachamama! And our patron saints, Dionysus & St. Therese are gonna be right there with us to enjoy!! Those two - wow so much love! Dionysus love to party sure but also he very good at prepping for the party and make sure to just enjoy life!! And St Therese - her little roses! Her child like wonder and love for life - her faith absolute FAITH! She knows she can do what SHE can do, and she don’t feel bad bout what she can’t do!

A recipe card for Banana bread propped against a black box on top of a wooden table. Part of a purple hippo Squishimal is in the background. The recipe reads: Banana Bread 350° F 2-3 very ripe, peeled bananas 1/3 c melted butter 1 t baking soda Pinch salt 3/4 c sugar 1 egg, beaten (or 1 flax egg) 1 t vanilla 1.5 c sifted flour (feel free to add any baking spices in any amount your heart desires. Some good options: cinnamon, ginger, cardamom.) Preheat oven to 350° F. Grease loaf pan. In medium bowl, mash bananas (tip: try using a pastry cutter here) until completely smooth. Stir in the melted butter. Sprinkle baking soda and salt evenly over the mixture, then mix. Stir in sugar, egg, & vanilla. Add flour/spice mixture & mix until just combined. Pour into loaf pan. Bake 55-60 minutes or until done. Cool on wire rack.
