O novo terroir Serras corresponde a zonas serranas com presença de vinha em encostas e planaltos, caracterizadas por maior altitude média (232 metros), clima mais fresco e húmido e amplitudes térmicas diárias acentuadas, fatores que influenciam uma maturação mais lenta das uvas e a preservação da acidez natural. Com uma área total de apenas 375 hectares, o O conteúdo Serras passa a ser o quarto terroir da região dos Vinhos do Tejo aparece primeiro em Mais Ribatejo.

Black Pork’s shrimp and oyster mushroom quesadillas. This photo, showing one unfolded to reveal all the ingredients, is not very pretty! I quit trying to pretend to be a food photographer in order to show the generous proportions of ingredients.

The shrimp and locally harvested oyster mushroom quesadilla has made the leap from the chef’s febrile imagination to the plate, at Black Pork, in Long Beach, California. Really a great food experience.
