Chopped up chicken of the woods. Fresh but tough.

Since it was so dry, this chicken of the woods was a bit tough so I put it in a bag and marinated it overnight (olive oil, balsamic vinegar, and some garlic salt.) Next day I baked at 350 for 25min., then added to pan to sauté in butter and more olive oil. Sounds like a lot but the taste was delicious! Just like chicken!

This is one of the pieces of chicken of the woods that I harvested. It was larger than a large human hand. (Laetiporus sulphureus) From Central Kentucky.
